This is by far my favourite way to eat leftover spaghetti at the moment. It’s so quick and simple – admittedly so much so that it hardly needs a recipe, but I wanted to add it to the site for inspiration. The fresh tomato and parsley give it such an amazing flavour that it’s hard to believe there’s not more to it.
Make in 5 minutes
- 150g cooked spaghetti
- 10 cherry tomatoes, halved
- knob of butter
- 1 tsp chopped parsley
- parmesan, for grating
- Pop the spaghetti in a bowl, add the tomatoes and butter and pop in the microwave for 2 minutes or until the butter has melted and the tomatoes are hot and are turning soft.
- Scatter over the chopped parsley and grate a generous helping of parmesan over the top. And ta-da, all done. See, I told you there was nothing to it.
