This is by far my favourite way to eat leftover spaghetti at the moment. It’s so quick and simple – admittedly so simple that it doesn’t even really need a recipe, but I wanted to add it to the site for inspiration. The fresh tomato and parsley give it such amazing flavour that it’s hard to believe there’s not more to it.

Ingredients

  • 150g cooked spaghetti
  • 10 cherry tomatoes, halved
  • 1 knob of butter
  • 1 tsp chopped parsley
  • parmesan, for grating

Method

  1. Pop the spaghetti in a bowl, add the tomatoes and butter and pop in the microwave for 2 minutes or until the butter has melted and the tomatoes are hot and a bit mushy.
  2. Add the parsley and grate the parmesan on top. And TA-DA. All done. See. Not a recipe.
