This is a super easy lunch (or dinner) recipe –  a perfect alternative to that boring sandwich or dry toast. It requires such little effort, just pop the sweet potatoes in the oven for a bit, then add the topping before devouring swiftly.

Make in 50 minutes (with a 45 minute break)
– Serves 1
– 3 of your 5 a day
– Vegetarian
– Gluten free

Ingredients

  • 2 large sweet potatoes
  • 100g feta, crumbled
  • 100g sweetcorn
  • half a red pepper, chopped into small chunks

Method

  1. Heat the oven to 200°/180°C fan/gas mark 6.
  2. Prick the sweet potatoes in a couple of places and pop them in the oven on a baking tray for 45 minutes, until soft.
  3. Add the feta, sweetcorn and red pepper.
  4. Serve.

Tip

You can vary the filling here – why not try avocado and black bean, or tuna and sweetcorn, or in fact, why not pop your usual sandwich filling in there…
