This is a super easy lunch (or dinner) recipe – a perfect alternative to that boring sandwich or dry toast. It requires such little effort, just pop the sweet potatoes in the oven for a bit, then add the topping before devouring swiftly.
Make in 50 minutes (with a 45 minute break)

- 2 large sweet potatoes
- 100g feta, crumbled
- 100g sweetcorn
- half a red pepper, chopped into small chunks
- Heat the oven to 200°/180°C fan/gas mark 6.
- Prick the sweet potatoes in a couple of places and pop them in the oven on a baking tray for 45 minutes, until soft.
- Add the feta, sweetcorn and red pepper.
You can vary the filling here – why not try avocado and black bean, or tuna and sweetcorn, or in fact, why not pop your usual sandwich filling in there…
