Gnocchi with feta, spinach and peas

This is not only a recipe that requires absolutely no chopping at all, it also uses ingredients with a good shelf life – making it a great meal to cook when you’re low on time as well as groceries. Plus, it’s super tasty.

bowls of food

This recipe is designed to be made in a tiered steamer for the hob, with the gnocchi boiling in the water at the bottom and the vegetables in the steamer insert above. If you don’t have this set-up, simply use two separate pans – one to boil the gnocchi and the other with a little water in the bottom, to steam the vegetables.

  1. Add boiling water to the bottom pan. Place the frozen spinach in the steamer above for 7 minutes.
  2. Then add the peas in with the spinach. Pop the gnocchi in the bottom pan to boil.
  3. After 3 minutes strain the gnocchi. Crumble the feta over the gnocchi and stir in the spinach and peas. Tear the parsley over the top. (You could chop the parsley, but that will discount the no-chopping rule for this recipe!)

You can of course use fresh spinach instead of frozen here. Just pop in at the same time as the peas, to shave off a few minutes.

If you love it, don’t forget to pin it.
